BUCYRUS, OH (CRAWFORD COUNTY NOW)—A new home bakery in town is offering customers fresh baked cakes and cookies without the sugar.
KeyTones & Cake, 611 Sears Street, sells a variety of classic cheesecakes and cookies that are diabetic, keto, and gluten friendly. All the goodies, however, are low carbohydrate yet high in protein.

“I’m just trying to offer some good options,” said owner Joy Edington, who opened the USDA-certified bakery in April. “It’s a way to celebrate special occasions without blowing your health and fitness plans.”
KeyTones & Cake specializes in six varieties of cheesecakes – shortbread or chocolate lovers’ crust – topped with sugar-free salted caramel drizzle or sugar-free raspberry preserves and heaps of sour cream and low-carb cookie crumbs, Edington said.

The bakery also whips up pecan sandies and chocolate chip cookies, with other cookie selections available for the holidays, Edington said. Curated dessert boards brimming with an assortment of self-serve sweets are another popular product, she said.
Edington, who grew up in Marion, said she has been on a weight-loss program for years that eliminates sugar and grains from her diet. “I spent the last 15 years having to say ‘no’ to birthday cakes and other celebrations that revolve around sugar.”

With a family history of diabetes, she said it became important for her to find healthier options, so she experimented with keto recipes and ultimately decided to start her own business. “I have a great faith in the Lord, and I feel like He opened the doors.”
KeyTones & Cake prepares everything to order, including carrot cake and low-sugar pies with a keto crust. Edington said she’s also a stickler for using fresh ingredients – almond flour, real butter, cage-free eggs, lemon zest, and pure vanilla extract, among others.

Free samples are available, she said, and delivery is free to customers in Bucyrus. “My hope and my business objective is to give healthier ways to celebrate so that everyone can join in,” she said. “It’s been fun. It especially gives me great pleasure and joy.”
